A journey through the flavours of the Hyblaean area will show you the world of cheesemakers and farmers. Each slow exertion made by these workers is repaid by the high quality of the resulting products.
Our private guided tour will start with the visit of a dairy business to see the laborious production of provola, ricotta and PDO Ragusano cheese.
While still immersed in the scent and flavours of Ragusa dairy products, we will move for a walk among centuries-old olive tree groves in Chiaramonte: these trees provide an oil with an intense scent and an exquisite flavour, the PDO Hyblaean Mounts. Then, in an oil mill, we will see the process of the cold olive oil extraction and enjoy the different organoleptic nuances that each type of olive confers to this special oil.
Finally, we will move to the Plain of Gela or "Geloi" Fields, whose Nero d’Avola and Frappato vineyards make the soul of a ruby-red wine that is characterised by a soft flavour. Its name is Cerasuolo of Vittoria. A final visit to long rows of small trees and to a winery will disclose the secrets of this extraordinary wine that will fill our chalices during the final banquet.
