The altitude of the Madonie Mountains, their past isolation and the use of locally sourced ingredients have developed a culinary tradition somewhat different from coastal Sicily. This tradition is particularly renowned for its bread, pastries, and especially its unique cheeses.
Our private food tour will start with a visit to Castelbuono, a small medieval village characterized by the splendid Ventimiglia Castle, dating back to the 14th century, and a maze of vibrant cobbled streets and squares surrounded by historic buildings. In the heart of the village, we will visit bakeries and pastry shops to taste what makes Castelbuono a must-visit for those seeking traditional flavors.
We will then head to a dairy, where we will learn how Madonie provola is made according to the southern tradition of stretched-curd cheeses, and we will conclude the visit with a casual lunch prepared by the cheesemakers.
